This is a great review of an important topic. My wife and I still use a heavy-bottomed Dutch oven handed down to her by her Italian grandmother. I don't know what kind of metal it is made from, but food rarely sticks, and it has endured thousands of encounters with food and heat. The latter is both on the range and in the oven.
