These are great rules. However, rules are made to be broken. While I rarely drink red wines with fish, tuna and salmon are exceptions. Their dense and rich, almost meat-like quality makes reds a perfect match. The bottom line for me is to drink what wines you like. Living in Florida, I drink more reds in the winter months and chilled whites in the hot summer. Lighter reds, like Pinot Noir, can match many different foods.
