The only other time I use maximum heat is when I am blackening fish in a cast iron pan. I don’t do this often as I think it makes a dish tasting like spicy burnt fish. However my wife loves it. I won’t use a high quality or expensive fish either. Here is one more rant. Cooking shows refer to charring. It sounds sexy but it is the same thing as burnt.
