My Italian wife of 18 years "turned me on" to this cheese. We buy small blocks of it at our local Italian market. The brand is Locatella PR. We grate it in a food processor, but it never spoils or goes dry since we consume so much. We store the grated cheese in a covered glass container. Since eating it, Parmesan Regianno seems boring and ordinary.
