Great suggestions. I have two comments. Raw poultry should never be rinsed as it spreads germs everywhere. After preparing, wash hands, knives, and cutting boards throughly, then cook. This is one place where wooden cutting boards should not be used. Second, your advice about fish is mostly true. However, I catch my own fish and it will keep fresh in a plastic bag in a bowl surrounded by ice for up to three days in the fridge. But since the store where you purchase it may have had it on ice for a week, best to cook it that day. Learn how to recognize fresh who,e fish, clear eyes and bright gills. And there is nothing wrong in asking to smell fillets. If they smell like “ fish” it’s spoiled. Fresh fish only smells like the ocean or a lake.
